'Sandwich Man' Opening All-Natural, Gourmet Sub Shop in West End

Urban Sub will focus on delivery for its grilled sandwiches priced around $8.

This October, Jason Cassidy, a self-described “sandwich man,” will bring his two decades experience to the West End when he opens Urban Sub in the West End.

A veteran of Milio’s and the founder of the Poor Boys Sandwich Company in St. Cloud, Cassidy plans to specialize in all-natural ingredients prepared fresh at Urban Sub’s 5621 Wayzata Boulevard location, sandwiched between Yangtze and Taste of India in the old Subway storefront.

“My niche is going to be a hot, grilled sandwich,” Cassidy said. “I’m cooking my beef and chicken and we’re slicing everything fresh in the shop. We’re making our own homemade soups, making our own coleslaw.”

Sandwiches, such as a Chipotle pulled pork or a smoked turkey melt, will retail for about $8 when Urban Sub opens Oct. 10. Customers can eat at one of the restaurant’s nine seats (with space for 20 more in the summer), but Cassidy’s business model focuses on delivery.

“That West End area is a great location for daytime delivery and evening delivery as well,” he said.
